What’s on the opening menu at Casa Bonita.

DENVER (KDVR) – The long awaited opening of Casa Bonita is finally here! And the new expected menu is rolled out.

Executive Chef Dana Rodriguez keeps it simple, but make no mistake, the quality will be a very noticeable improvement.


From Mexican staples like enchiladas and carnitas to mole and a kid-friendly menu, Casa Bonita’s options should keep the kitchen running efficiently for a large-capacity restaurant. And the best part? Chips and salsa and sopapillas are included with every meal.

Rodriguez said her plan during the renovation was to “improve everything, but not change anything.”

Chef Rodriguez’s roots run deep.

Starting as a dishwasher, Rodriguez worked her way up the local restaurant hierarchy, including time in the kitchen at two of Denver’s most popular restaurants, Rioja and Bistro Vendome with James Beard award-winning chef and owner Jennifer Jasinski.

Rodriguez herself has been nominated or a finalist for the James Beard Award three times.

Her other restaurants in Denver include Work and Room, Super Mega Bien and Cantina Loca.

The cocktail menu is an homage to Mexico with classics like margaritas and Palomas, but other non-traditional Mexican twists highlight the drink program.

While an official opening date has not been announced, the restaurant will have a soft opening with limited dining hours. Guests for the special event will be selected from those who subscribe to the Casa Bonita email list.
